Before leaving to Japan, I baked cupcakes for Omar’s birthday. It is one of the best cupcakes I’ve ever made! (My husband prefers cookies though). (So I ate many of them myself). And it happens to be vegan. I definitely recommend it if you like a sweet, chocolate, and healthy version. The cream is my all time favorite coconut whipped cream.
Ingredients : 1 cup soy milk, 1 teaspoon apple cider vinegar, 3/4 cup sugar, 1/3 cup canola (or coconut) oil, 11/2 teaspoon vanilla extract, 1 cup all-purpose flour, 1/3 cup cocoa powder, 3/4 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt
日本に行く前オマーの誕生日だったのでカップケーキを作ってみました。バターも卵も使わないのに美味しい! (彼はクッキーのが好きでこういうのはあまり好まないのを最近新発見)(と言う訳でかなり私が食べてしまった)。甘さも控えめなので沢山食べても軽いのでお勧めです☆
材料 : 豆乳1カップ、アップルサイダービネガー 小さじ1 、砂糖 3/4カップ 、油 1/3カップ 、バニラエッセンス 小さじ1/1/2、小麦粉1カップ、ココアパウダー 1/3カップ、ベーキングソーダ小さじ3/4、ベーキングパウダー 小さじ1/2、塩 小さじ1/4
1. Preheat oven 350F. Whisk together the soy milk and vinegar in a bowl and set aside for a few minites to curdle. Add sugar, oil, vanilla exact to the soy milk mixture and beat until foamy.
2. In a separate bowl, sift together flour, cocoa powder, baking soda, baking powder and salt.
Add dry ingredients to wet ingredients and beat together.
1. オーブンをに約175度に予熱。ボウルに豆乳とお酢を混ぜて数分置いておく。そこにバニラエッセンス、砂糖、オイルを加えフワっとなるまで混ぜる。
2. 違うボウルに振るった小麦粉、ココアパウダー、ベーキングソーダ、ベーキングパウダー、お塩をいれ混ぜる。粉のボウルの中身を豆乳の中に入れ混ぜ合わせる。
3. Pour into cupcake cups, filling 3/4 of the way. Bake 18-20 minites, until a toothpick inserted into the center comes out clean.
3. カップケーキの型に3/4位まで流し入れ、18−20分程焼く。楊枝を刺してみて中身がついてこなかったら出来上がり。
