I’ve been using rice flour lately as it’s an easy-to-use alternative to all-purpose flour. Rice flour is gluten-free, so it’s a useful option if you have an allergy etc. There are some ingredients I had to get in order to bake this recipe, such as almond powder and grape seed oil, but those are useful as I saw lots of rice flour recipes using them. You might not be familiar with miso, but I always use them when I cook miso soup or another japanese dishes *I see them in american grocery stores everywhere lately too. It adds a tasty touch to the cake and I love the result! Ingredients below.
前に友達が教えてくれて以来気になってた米粉。最近使い始めてみたら色々なレシピがあって見てるだけで楽しい☆ お米の粉だけあってやっぱり日本の食材と合わせるのが美味しそうなので、今回はお味噌を使ったパウンドケーキを作ってみました。レーズンがあったので入れてみたけど、ほんのり味噌味と合って美味しくできました(通常もう少し膨らむのだろうけど..)アーモンドパウダーとグレープシードオイルはこのレシピの為に買ったけど、米粉のレシピでよく出てくるので今後も使えそうです。材料は下に書いたのでよかったら!
Ingredients :
A. 140g soy milk, 25g (21/2 tablespoons) brown sugar, 12g (1 tablespoon) grape seed oil,
2 teaspoons miso
B. 1 cup rice flour, 20g (4 tablespoons) almond powder, 6g (11/2 teaspoons) baking powder, raisins
材料 :
A. 豆乳 140g, てんさい糖 (砂糖) 25g, グレープシードオイル 大さじ1, お味噌 小さじ2
1. Combine all A ingredients in a bowl and mix well.
1. Aを全てボールに入れて泡立て器でよく混ぜる
2. Combine all B (dry) ingredients together in a different bowl and stir into A bowl. Mix well.
2. Bを全てボールに入れ、Aのボールにふるい入れゴムベラでよく混ぜる
3. Pour into a loaf pan, and bake in the preheated oven (350 F) for about 30 minutes.
3. 型に入れ170度予熱のオーブンで約30分焼く
